Smoky Lentil Sweet Potato Power Bowl

Ingredients
For the Lentils
1 cup dry green or brown lentils, rinsed
3 cups water or vegetable broth
1 tsp garlic powder
1 tsp smoked paprika
½ tsp cumin
½ tsp salt
For the Sweet Potatoes
2 large sweet potatoes, cubed
1 tbsp olive oil
1 tsp smoked paprika
½ tsp black pepper
Pinch salt
For the Greens
3 cups kale or spinach (fresh or frozen)
Squeeze of lemon
Optional Tahini Drizzle
2 tbsp tahini
Juice of ½ lemon
Water to thin
Pinch salt
Instructions
1️⃣ Cook the Lentils
Add lentils and water to a pot.
Bring to a boil, then reduce to simmer.
Cook 20–25 minutes until tender.
Stir in spices and salt during the last 5 minutes.
Drain excess liquid if needed.
2️⃣ Roast the Sweet Potatoes
Preheat oven to 400°F.
Toss cubes with olive oil and spices.
Roast 25–30 minutes until caramelized.
3️⃣ Cook the Greens
Lightly sauté greens or steam until wilted.
Add squeeze of lemon and pinch salt.
4️⃣ Assemble
Layer:
Lentils
Sweet potatoes
Greens
Drizzle with tahini (optional)
Store in glass containers for up to 4 days.
