Mini Veggie Pizza

Pizza night doesn’t have to be complicated, or covered in dairy, to be delicious! This colorful veggie pizza is topped with a creamy homemade Brazil nut cheese that adds a rich, satisfying flavor to every bite. It’s an easy and approachable way to enjoy more plants while still making a meal that feels comforting and familiar.

Whether you’re fully plant-based or simply looking for a creative way to add more vegetables to your week, this recipe is perfect for family pizza night, a relaxed weekend dinner, or using up the veggies already in your refrigerator.

1 cup Soaked Brazil Nuts

1/4 - 1/2 of Lime Juice

1 tsp. Sea Salt

1/2 tsp. Onion Powder

1/4 tsp. Cayenne

3/4 cup Nondairy Milk

3/4 cup Water

Blend together, and set aside.

Pitas

1/2 red onion, sliced

1 zucchini, sliced

Salt and pepper to taste

Sauté vegetables in skillet until slightly soft.

Put oven on broil. Put pita in oven for 2-3 minutes on one side. Flip them over. Top pita with cheese and veggies and put back in oven to broil for 2-3 more minutes, or until cheese is broil. Enjoy
