Creamy White Bean and Cabbage Skillet

Ingredients

  • 2 cans white beans (cannellini or great northern), drained and rinsed

  • ½ large green cabbage, thinly sliced

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • ½ cup unsweetened plant milk

  • 2 tbsp nutritional yeast

  • 1 tbsp Dijon mustard

  • 1 tsp smoked paprika

  • ½ tsp black pepper

  • ½ tsp salt

  • Optional: red pepper flakes

Instructions

1️⃣ Sauté Aromatics

  • In a large skillet over medium heat, sauté onion and garlic with 1–2 tbsp water (or a small amount of oil if preferred).

  • Cook 3–4 minutes until softened.

2️⃣ Add Cabbage

  • Add sliced cabbage.

  • Cook 8–10 minutes until softened and slightly caramelized.

3️⃣ Add Beans & Creaminess

  • Stir in beans.

  • Add plant milk, nutritional yeast, Dijon, and spices.

  • Simmer 5–7 minutes until slightly thickened.

4️⃣ Finish

  • Adjust salt and pepper.

  • Add squeeze of lemon if desired.
