Creamy White Bean and Cabbage Skillet

Ingredients
2 cans white beans (cannellini or great northern), drained and rinsed
½ large green cabbage, thinly sliced
1 small onion, diced
3 cloves garlic, minced
½ cup unsweetened plant milk
2 tbsp nutritional yeast
1 tbsp Dijon mustard
1 tsp smoked paprika
½ tsp black pepper
½ tsp salt
Optional: red pepper flakes
Instructions
1️⃣ Sauté Aromatics
In a large skillet over medium heat, sauté onion and garlic with 1–2 tbsp water (or a small amount of oil if preferred).
Cook 3–4 minutes until softened.
2️⃣ Add Cabbage
Add sliced cabbage.
Cook 8–10 minutes until softened and slightly caramelized.
3️⃣ Add Beans & Creaminess
Stir in beans.
Add plant milk, nutritional yeast, Dijon, and spices.
Simmer 5–7 minutes until slightly thickened.
4️⃣ Finish
Adjust salt and pepper.
Add squeeze of lemon if desired.
