Lemon Blueberry Cookies

If sunshine had a flavor, I’m pretty sure it would taste like these lemon blueberry cookies. They’re soft, chewy, just the right amount of sweet, and bursting with bright lemon zest and juicy blueberries. Basically, they’re the kind of cookie that disappears faster than you expect—especially if you “accidentally” eat three while they’re still warm.

This recipe came together on one of those days when I needed a little pick-me-up and didn’t feel like making a big mess in the kitchen. Simple ingredients, no fancy techniques, and the reward? A tray full of cookies that taste like summer and feel like a hug.

Whether you’re baking for a crowd or just treating yourself (no shame in that), these cookies hit the sweet spot. Let’s get into it!

½ cup room temperature vegan butter

½ cup+ 2 Tablespoons coconut sugar

1 tbsp ground flax

1/4 cup blueberries

2 tbsplemon juice

2 tsp lemon zest

1 tsp vanilla extract

1 cup+ 3 Tablespoons all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

First, mix the butter and ½ cup of sugar in a bowl until it's light and fluffy, which takes about 1 minute. Then, add the ground flax, blueberries, lemon juice, lemon zest, and vanilla, and mix them together.

Next, add the sifted flour, baking powder, and salt to the bowl. Mix everything until you have a smooth and thick cookie batter.

After that, put the bowl of dough in the fridge, cover it, and let it chill for 30 minutes to 1 hour.

Cover a baking sheet with parchment paper and preheat the oven to 350F. Take the dough out of the fridge and scoop it. Roll the dough into balls between your palms.

Put the lemon sugar cookie dough balls onto the baking sheet, making sure to keep them about 2 inches apart because they will spread while baking.

Bake for 10-14 minutes until the bottoms are lightly browned and the cookies are cooked through but still slightly soft in the centers.

Take the cookie tray out of the oven and let the cookies cool on the baking sheet for 5-10 minutes.

Once the cookies have cooled, serve and enjoy!
