White Bean Salad

This white bean salad with oranges is one of those dishes I reach for when I want something quick, wholesome, and just a little bit fancy without trying too hard. The creamy beans bring that satisfying heartiness, while the juicy orange slices add a bright, sunny twist that wakes everything up. 2 cups white beans
1/2 cucumber, cubed
Sun-dried tomatoes
1 orange/ tangerines
Thyme
Salt and pepper to taste
Tahini
1/2 tablespoon ginger, minced
1/2 orange, juiced
1/2 lemon, juiced (optional)
Please white beans in a large bowl. Add the sun-dried, tomatoes, cucumber, and thyme. Sprinkle salt and pepper, then stir thoroughly. Peel and section orange/tangerines, then garnish on top. In a small, separate bowl, add tahini, ginger, orange juice, and water. Whisk until smooth. Serve in bowl and top with tahini sauce. And enjoy.
