White bean & Vegan feta pita
Sometimes the best meals are the ones that feel effortless—just a handful of simple ingredients tucked into a pita that somehow tastes like you planned it all week. That’s exactly what happened with this white bean and vegan feta pita. The creamy beans give it comfort-food vibes, while the tangy feta brightens everything up, and together they make a quick bite that feels a lot fancier than it is. Whether you’re rushing between errands, packing lunch, or just craving something light but filling, this pita is proof that good food doesn’t have to be complicated.
1 can cannellini beans or white navy beans
1 avocado
1 tsp onion powder
1 tsp garlic powder
1/2 -1 tbsp za’atar seasoning
Salt and pepper, to taste
1/4 lemon, juiced
1/2 tbsp dill relish
Pita bread
Arugula
Tomato
Vegan feta cheese
In a large mixing bowl, mash all the white bean mixture ingredients until there is texture and flavor throughout the bowl.
Assemble pita by cutting pita bread and half and stuff with bean mixture, arugula, tomato, and vegan feta cheese. And enjoy.
