Vegan Curried Cabbage
Sometimes the simplest ingredients surprise you the most. Take cabbage—it usually gets overlooked, but with the right spices, it transforms into a warm, flavorful dish that feels like comfort in a bowl. This curried cabbage recipe is one of my favorite ways to make a quick, budget-friendly meal that still feels special. The curry spices give it a little kick, while the cabbage soaks up all that flavor and turns tender and delicious. Whether you’re pairing it with rice, scooping it up with flatbread, or just enjoying it on its own, this dish is proof that healthy and cozy can absolutely go hand in hand.
1 tbsp. avocado oil or other kind
1/2 medium onion
2 garlic cloves, minced
1 lb. cabbage, shredded like for coleslaw
1 tbsp. curry powder
1/2 tbsp. cumin
1/2 tsp. salt
1/2 cup coconut milk
Add the oil to a pan, then add the chopped onion. Cook until the onion has softened (5 minutes)
Then add the minced garlic and cook for 1 minute.
Next, add the cabbage and cook for 20 minutes, or until the cabbage reaches the texture that you like.
Add the curry powder, cumin and salt and cook for 2-3 minutes, allowing the spices to toast a bit.
Pour in the coconut milk and bring the ingredients to a gentle simmer.
Turn off the heat and enjoy.
