Vegan Couscous and White Beans Dish
You know those nights when you open the pantry, stare for a minute, and think, “Okay… what can I make fast that still feels like a real meal?” That’s exactly how this couscous and white beans dish was born. It’s one of those simple, satisfying meals that comes together with pantry staples but still tastes like you put in way more effort than you did.
The fluffy couscous soaks up all the flavors, the white beans add creaminess and protein, and a few veggies or herbs take it from basic to beautiful. Whether you’re rushing between work and family or just not in the mood for a long cooking session, this meal has your back.
Because sometimes “good enough” turns out really good.
½ cup cooked couscous
½ cup white beans
1 tbsp olive oil, lemon juice, and dried herbs (parsley and dill)
chopped cucumber and/or tomato
First follow the cooking instructions on the back of the packet. In a medium bowl, add cooked couscous, white beans, olive oil, lemon juice, herbs, cucumbers, tomatoes, salt and pepper for taste. Mix until everything is perfectly combined. Serve and enjoy!
