Homemade Pantry Sofrito

This vibrant, fragrant blend of peppers, onions, garlic, and herbs is the base for so many delicious dishes—especially in Latin and Caribbean cooking—but I promise, once you try it, you’ll want to stir it into everything.

Think of sofrito as that best friend in the kitchen who makes everything better without needing the spotlight. I make a big batch, freeze it in portions, and it’s like flavor on demand. Whether you’re new to it or grew up with a version in your family kitchen, this recipe is simple, customizable, and totally worth having on hand. Let’s get into it!

1 head garlic, peeled

2 medium onions, peeled

5 sweet peppers

1 red bell pepper, stemmed and seeded

2 green bell peppers, stemmed and seeded

2 large tomatoes

1 bunch cilantro leaves

1/2 bunch fresh parsley leaves

1 tablespoon olive oil

2 tablespoon white vinegar

2 tablespoons Mexican oregano

Blend in a food processor or blender. Then, put a freezer safe container, add use as needed. Add it to taco “meat”, stews, soups, rice dishes or more. It is so flavorful. Enjoy!
