Vegan Strawberry Cream Pie

I made this on a whim one day when I had fresh strawberries sitting in the fridge and a craving for something creamy, light, and sweet—but without turning on the oven. The result? A no-fuss, no-bake pie that tastes like a cross between a strawberry shortcake and a cheesecake, all while being 100% plant-based. Whether you’re making it for a backyard gathering, a weeknight treat, or just because strawberries were on sale, this pie is a keeper!
1 package cream cheese
1 container vegan Cool Whipped topping
1 cup confectioners’ sugar
2 cups strawberries
1 graham cracker pie crust
Mix cream cheese and confectioners sugar.
Fold in Cool Whip.
Add strawberries and mix with a spoon, just until mixed in good.
Spoon into pie crust and chill for at least 3 hours.
Serve and enjoy.
