Vegetable Fajitas

Fajita seasoning-

4 teaspoons chili powder

2 teaspoons ground cumin

2 teaspoons paprika

2 teaspoons coconut sugar

1 teaspoon garlic powder

1 teaspoon onion powder

cayenne pepper to taste

salt to taste

Frozen tri-pepper mix

Frozen veggies

Tortillas

Toppings of your choice

In a mixing bowl and all of your fajita seasonings and whisk together. Set as aside. In a large skillet, add oil and frozen tri-pepper blend. Sauté for one minute. Add the rest of the frozen veggies. Add fajita seasoning and additional salt for taste. Sauté together, stir often, covered and uncovered. Add water, so veggies won’t stick. Cook until liquid is absorbed. Warm up your tortillas and assemble fajitas with veggies and then add toppings of your choice. And enjoy.
