Vegan Tomato Soup

There’s something about tomato soup that just feels like home. It’s simple, familiar, and comforting — and when it’s made plant-based, it gives you all that coziness without feeling heavy afterward. This vegan tomato soup is one of my go-to reset meals after a long day of teaching, mom life, and everything in between. It uses everyday ingredients, comes together easily, and still tastes like you put real effort into it.

I know that you already know — plant-based eating doesn’t have to be fancy or complicated. Sometimes it’s just about upgrading a classic to fit the life you actually live. This soup is creamy without dairy, rich without being overwhelming, and perfect with a grilled sandwich or a slice of sourdough when you need something warm and nourishing.

1 Tsp oil

1 onion, diced

2 garlic cloves, minced

½ Tbsp ground turmeric

1 tsp dried basil

3 cups tomato puree

3 cups (for soup/ 4 cups for boiling pasta)vegetable broth

1 Tbsp tomato paste

¾ tsp fine salt, or according to taste*

⅛ tsp black pepper

½ lb short cut pasta

In large pot, pour 4 cups of vegetable broth and bring to a boil. Place pasta in and cook according to the package of the pasta. Once done drain and set aside.

Warm the oil in a large pot over medium heat. Once the oil shimmers, add the diced onion and cook, stirring often for 5 minutes, until the onion is turning translucent.
Add the garlic, the turmeric and the basil, and stir to enhance all the flavors for about 1 minute.

Add the tomato sauce, broth, tomato paste, salt and pepper (¾ tsp of fine salt is fine is you use low sodium vegetable broth, but if not use less).
Stir in the cooked pasta, then reduce the heat to maintain a simmer and allow the pasta to take in the flavors. Stir often.
The soup will nicely thicken while the pasta is absorbing flavor, but trust your judgement and add extra broth if needed of if you prefer a thinner consistency when the pasta is done. Turn the heat off, taste and adjust the seasoning to your liking if needed. Pour in bowls and add your favorite vegan creamy cheese. And enjoy.
