Vegan Roasted Greek Veggies and Tofu.

2 tablespoons olive oil
1 lemon, juiced
4 cloves garlic, minced or pressed
1 tablespoon dried oregano
1 tablespoon red wine vinegar
1 teaspoon dried basil
2 teaspoons dijon mustard
¾ teaspoon salt
¼ teaspoon black pepper
1 block tofu
1 zucchini
1 bell pepper
1 onion
1 pint cherry tomatoes
Topping optional:
Vegan feta
Vegan tzatziki
hummus
Preheat oven to 400°. In a measuring cup, combine all dressing ingredients and whisk until smooth. Press liquid out of tofu. Chop veggies and pour into a large bowl with the tofu. Take the dressing and pour on top. Mixed together until everything is coated. Transfer to parchment papered baking tray. Bake in the oven for 30 to 40 minutes. Once veggies, have a nice crisp to them remove from oven and serve with any topping of your choice and with any grain. Enjoy!
