Vegan Adobo Taquitos

You ever make something so simple… but so good… that you have to pause mid-bite and ask yourself, “Why don’t I make this every week?”

That’s exactly what happened with these vegan adobo taquitos.

They’re crispy on the outside, creamy on the inside, and packed with that smoky, savory adobo flavor that makes you feel like you really did something in the kitchen—even if it only took you a few minutes. And listen, I know that you already know how clutch it is to have a recipe that the whole family will eat without negotiating.

Whether you’re a busy mama trying to get dinner on the table fast, a new vegan looking for flavor, or someone who just loves a good handheld bite, these taquitos are about to become your new weeknight favorite. Let’s get into it.

1 1/2 cup Sofrito seasoning

2 chipotle chili +2 tablespoons adobo sauce

2 cloves garlic, minced

1 tsp red wine vinegar

1 tsp ancho chili powder

1 tsp ground cumin

1/2 tsp dried oregano

1/2 tsp salt and pepper

1 package high protein tofu

Street taco tortillas

Queso-

1 cup raw cashews, soaked overnight (or soaked in boiling water for 1 hour)

½ cup vegan unsweetened plain yogurt

2 tablespoons water or vegetable broth

½ cup salsa of choice

1 teaspoon ground cumin

½ teaspoon chili powder

½ teaspoon smoked paprika

1 teaspoon kosher salt

2 tablespoons nutritional yeast

Put all marinade ingredients in a large mixing bowl. Shred the drained tofu. Add the marinade to the tofu, and let’s sit for 30 minutes.

While that is sitting, create queso dip. Add all queso ingredients to a blender and blend until smooth.

Assemble, taquitos by placing 1-2 tablespoons of tofu mixture on a street taco tortilla and roll tightly. Then place taquito in a parchment lined casserole dish. Repeat until all tortillas are used. Brush with a little avocado oil to make an extra little crisp.

Place oven on 410° and bake for 17–20 minutes. Take out and let cool before eating.  Place as many taquitos on a plate that you want. Place queso and any of your favorite toppings on top. And enjoy.
