Noodles & Base

• 8 oz soba noodles

• 1 tablespoon toasted sesame oil

• 1 tablespoon neutral oil (avocado or grapeseed)

Veggies & Protein (mix + match)

• 1 cup shredded red cabbage or carrots

• 1 red bell pepper, thinly sliced

• 1 cup edamame or crispy baked tofu

• 2 green onions, sliced

Sesame Ginger Sauce

• 3 tablespoons tamari or soy sauce

• 1½ tablespoons rice vinegar

• 1 tablespoon maple syrup or honey

• 1 tablespoon creamy peanut butter or tahini

• 1 tablespoon grated fresh ginger

• 1 clove garlic, grated

• 1–2 teaspoons chili crisp or sriracha (optional)

Toppings (don’t skip)

• Toasted sesame seeds

• Crushed peanuts or cashews

• Fresh cilantro

• Lime wedges

Instructions:

1. Cook soba noodles according to package directions. Rinse under cold water and drain well (this keeps them springy, not gummy).

2. Whisk the sauce in a bowl until smooth and glossy.

3. Sauté sesame oil + neutral oil in a pan. Add veggies and edamame or tofu; cook 2–3 minutes until just tender.

4. Toss it all together: add soba noodles and sauce to the pan, gently tossing until evenly coated.

5. Finish strong with lime juice, sesame seeds, and crunchy toppings.
