Smoky Black Bean Bowl

Some days you need a meal that shows up for you when you barely have anything left to give. That’s exactly why this smoky black bean bowl with tofu exists. It’s simple, it’s filling, and it tastes like you spent way more time in the kitchen than you actually did.

What I love most is how customizable it is — toss in whatever veggies you have, season it how you like, and let the smoky flavor do all the heavy lifting. This is the kind of bowl that keeps you energized on those nonstop days and reminds you that eating well doesn’t have to be complicated. Pull up a bowl, take a breath, and let’s dive in.

2 cups black beans

2 cups cooked brown rice

1 pack smoked tofu

2 cups canned tomatoes, diced

1 tablespoon Cajun spices

Two handfuls kale

Avocado slices

Salt and pepper, to taste

1 cup raw cashews, soaked

½ cup vegan unsweetened plain yogurt

2 tablespoons water or vegetable broth

½ cup salsa of choice

1 teaspoon ground cumin

½ teaspoon chili powder

½ teaspoon smoked paprika

1 teaspoon kosher salt

2 tablespoons nutritional yeast

Blend queso sauce ingredients in blender until smooth and set aside.

In a skillet or frying pan, add tofu cubes, tomato, (and if you need more nonstick 1/4 cup water) and stir. Add kale, and stir until wilted. Then add black beans, cooked brown rice and Cajun spices. Sprinkle salt and pepper. Turn the heat off and stir occasionally for five minutes until everything is warm. And enjoy.
